Spicy millet porridge, known in Ghana as Hausa koko is a common meal that is enjoyed at all times. Hausa koko is made from a mixture of millet and local spices which improve its medicinal value, taste, and flavour. The millet porridge is called Hausa koko because it is believed to have originated from the Northern areas of Ghana. Aside from its popularity in the North, Hausa koko can be found on almost every street in Ghana and it is easy on the pocket.
Millet is a group of small-seeded grasses which is cultivated for human consumption. There are different varieties of millet. However, pearl millet, scientifically named Pennisetum glaucum is the most cultivated species. It is known in Hausa as 'Maiwa', and 'Bajra' in Hindi. Pearl millet has been grown in Africa and the Indian subcontinent throughout history. The center of diversity and area of domestication of the crop is in the Sahel zone of West Africa. Pearl millet thrives in both arid and dry environments.

A cup of hot Hausa koko can be a meal on its own. It can also be taken with fried beans dough locally known as “koose” or any type of bread. Hausa koko is a better option for people who are gluten-intolerant compared to porridge made of wheat.
