Key Result Areas: Menu preparation § Ensures that food is prepared according to menu plans and that menu plans are followed at all times § If required, they are able to make quick decisions about menu substitutions if specific ingredients are unavailable or out of stock § Special dietary needs of residents are met. Keeps clear records of any dietary requirements for residents. § Special function menus are prepared as requested Meal preparation § Ensures that all food and products are consistently prepared and served according to the facilities menu, portioning, cooking and serving standards § Directs kitchen staff to maintain the quality of meal presentation § Ensures that food storage meets infection control standards § Have a strong understanding of cooking times and temperatures for the volume of food cooked § Ensures that food is stored appropriately so that food retains its flavor, freshness and nutritional value. § Portions food products prior to cooking according to standard portion sizes and menu specifications Meal service § Provides feedback to care staff on how to ensure residents food arrives hot, and to standard (e.g. ensures that hot boxes are used where appropriate) § Monitor the service and presentation of meals and provide appropriate feedback
