- Millet dough (fermented/ fresh)
- Water
- Ginger
- Cloves
- Black pepper
- Hot chili powder
- Sugar and salt to taste (optional)
The spices listed above are optional. Also, one may add the desired combination and quantity.
The Usual Method
- Put millet dough into a saucepan.
- Add ground ingredients (cloves, ginger, black pepper, and chili pepper) to the dough.
- Strain twice with fine silk mesh, cover, and let set for one hour.
- Drain the liquid and set aside.
- Mix the residue with cold water and set aside.
- Boil some water.
- Take boiled water off the heat.
- Add the residue mixture to the boiled water and stir continuously to prevent lumps until the porridge thickens.
- Hausa koko is ready.
Alternative Method (to retain millet fibre in Hausa koko)
- Put millet dough into a saucepan.
- Add ground ingredients (cloves, ginger, black pepper, and chili pepper) to the dough.
- Add some water and mix the dough until smooth.
- Place over high heat, stirring continuously to prevent lumps.
- Add some more water to the boiling mixture for the desired thickness
- Bring to a simmer and take off the heat.
- Hausa koko is ready
Hausa Koko can be served with fried bean cake (locally known as koose or akara) or any bread of your choice. Serve with the desired amount of sugar. One may opt to add some evaporated milk or peanuts, for an added taste.
